Beth Hillson

PresentersBethHillsonGluten Free & More‘s food editor Beth Hillson is a chef and cooking instructor. She is founder of Gluten-Free Pantry, one of the first gluten-free companies in the United States, and author of Gluten-Free Makeovers (glutenfreemakeovers.com) and A Complete Guide to Living Well Gluten Free:  Everything You Need to Know to go From Surviving to Thriving.

Beth speaks to groups throughout the country on baking, eating and living well on the gluten-free diet.

 

Pam Jordan

PresentersPamJordanPam Jordan was diagnosed with celiac disease in January 2011 after struggling for fifteen years with symptoms.  She is a working wife and mom to three young kids.  Her blog (www.imaceliac.com) provides simple Gluten Free recipes, product reviews, restaurant reviews, and giveaways.  Pam wrote a cookbook called Family Approved Gluten Free Recipes. It is filled with easy to make gluten free recipes using ingredients you already have in your pantry.  To keep on track, Pam creates weekly gluten free menus to stay on budget and feed her active family.

 

Dr. Ellen Antoine

PresentersEllenAntoineDr. Ellen Antoine is a Board-Certified Emergency Medicine physician who is also Board-Certified in Integrative-Holistic Medicine and of the only class of practitioners certified by the Institute of Functional Medicine.  Her entire family’s personal health journey is an amazing and inspirational story of the power of dietary and lifestyle intervention to overcome chronic disease and children’s behavioral disorders. At Vine Healthcare (www.vinehealthcare.com), Dr. Antoine specializes in uncovering and addressing underlying root causes of disease or illness as well as preventative care.  She has extensive experience working with patients of all ages, in all stages of health. 

 

Jules Shepard

PresentersJulesShepard3Jules Shepard is associate editor of Gluten Free & More and a contributor to many other publications like Gluten-Free Living and Prevention.com. She is the author of three highly-regarded published books and numerous e-books on gluten-free living and cooking. She is a featured “Celebrity Chef” in Living Without’s Best Gluten Free Cookbook and is a featured contributor to Dr. Alessio Fasano’s 2014 book, Gluten Freedom. She has been featured in national media including The Washington PostUSA TodayForbes and Fox and Friends.

In addition, she founded and runs a gluten-free flour company (gfJules) and logs tens of thousands of miles a year speaking to, teaching and encouraging gluten-free consumers around the country. As an industry consultant, she helps companies in their transition to offering safe gluten- and allergen-free foods, and she has also spoken at numerous industry and retailer events, including Natural Products Expo education seminars and Healthy Baking Seminars.

She also co-founded 1in133.org, which built the World’s Tallest Gluten Free Cake in Washington, DC, and was credited with successfully pressuring the FDA to issue gluten free food labeling regulations which became final in 2014.

Jules hosts a popular internet radio show, personally pens one of the community’s most active gluten-free blogs (gfJules.com), oversees the annual Gluten-Free Cookie Swap, and personally moderates her Facebook, Twitter, Pinterest, Instagram and Google+ presences.  Jules can be found at gfJules.com and @THEgfJules.

 

Cindy Gordon

PresentersCindyGordonCindy is a mother of two boys; one in elementary school and one at preschool with multiple food allergies. Cindy is a brand ambassador for Sunbutter and the National Foundation for Celiac Awareness as well as a preferred blogger for Enjoy Life Foods. Cindy recently joined the Leadership Team of FAACT (Food Allergy & Anaphylaxis Connection Team) in 2015. She also contributes to MyLifeWithFoodAllergies.com and has written an article for Gluten Free & More Magazine. Cindy runs a successful gluten free allergy friendly blog, vegetarianmamma.com and released her first cookbook in July 2014. Be on the lookout for her second book, The Dessert Fork – an allergy friendly dessert cookbook scheduled to publish in May 2015.

 

Tami Pyles

PresentersTamiPylesTami Pyles is founder of Thrive On Consulting. She works daily to help those with food allergies learn practical day-to-day management strategies to Thrive On with food allergies. She also creates education and awareness so that everyone is prepared to help those with food allergies Thrive On. She is a certified AllerCoach through Food Allergy Gal, a food allergy mom who manages her daughter’s several life-threatening food allergies, and a food allergy advocate. She is co-chair of the 2015 Louisville Walk for Food Allergy and the founder and group leader for the Louisville Food Allergy Support Group. She has written several articles on food allergy awareness and management, including a series of guest blog posts for Kids with Food Allergies Foundation on managing the holidays with food allergies.

Prior to founding Thrive On Consulting she worked for over 15 years in higher education and training and development where her responsibilities have included overseeing the direction and success of programs at major universities and leading a Fortune 500 company’s training and development team.

 

Jenna Drew

PresentersJennaDrewJenna Drew is a passionate advocate for Celiac Disease, the gluten free lifestyle and real food transformations, and has traveled over 10,000 miles for Celiac Awareness.

Dr. Scott Antoine

PresentersScottAntoineDr. Scott Antoine completed Osteopathic Medical School in Philadelphia, Pennsylvania in 1993. He then completed a residency in Emergency Medicine and a fellowship in Emergency Medical Services (Pre-hospital and Disaster Medicine). After serving in the Army for 7 years as an Emergency Physician, Dr. Antoine moved to Indianapolis and began his career here. In addition to being board certified in Emergency Medicine, he is also board certified in Integrative and Holistic Medicine (ABIHM), and Metabolic, Nutritional, and Functional Medicine (FMNFM) by the Metabolic Medical Institute, which is educationally partnered with George Washington University and the University of South Florida.

 

Dr. Charlie Vanderpool

PresentersCharlieVanderpoolDr. Vanderpool’s main clinical interest is in pediatric nutrition, including both enteral and parenteral nutritional supplementation. He also has a specific interest in celiac disease in childhood. Dr. Vanderpool is developing a clinical program focusing on intestinal failure, including short bowel syndrome, and nutritional rehabilitation. Dr. Vanderpool is participating in clinical research within short bowel syndrome and intestinal failure.  He is the chair of the Nutrition Support Team at Riley Hospital.
