Gluten Free & More‘s food editor Beth Hillson is a chef and cooking instructor. She is founder of Gluten-Free Pantry, one of the first gluten-free companies in the United States, and author of Gluten-Free Makeovers (glutenfreemakeovers.com) and A Complete Guide to Living Well Gluten Free: Everything You Need to Know to go From Surviving to Thriving.
Beth speaks to groups throughout the country on baking, eating and living well on the gluten-free diet.
Debbie Adler is the owner of the nationally renown, gluten-free bakery Sweet Debbie’s Organic Cupcakes located in Los Angeles (www.sweetdebbiesorganiccupcakes.com). It is the first bakery in the United States to make allergy-free baked goods that contain certified organic ingredients and are sweetened only with stevia and coconut nectar.
In addition to owning her bakery, Debbie is also the author of the critically acclaimed cookbook, Sweet Debbie’s Organic Treats: Allergy-free & Vegan Recipes from the Famous Los Angeles Bakery. It was named a “Best Gluten-Free Cookbook of 2013” by Delicious Living Magazine and a “Favorite Book” by Living Without Magazine, and a “Best Vegan Cookbook of 2013” by Green Vegan Living.
Debbie will show you how she makes her best selling Chocoholic Cupcakes. Debbie will demonstrate how she combines high fiber gluten free flours with low-glycemic, all-natural sweeteners to make scrumptious cupcakes and frosting using whole foods and other nutrient dense ingredients. She will share the secret techniques that are used in her bakery to create all the Sweet Debbie’s desserts as well as the nutritional values of each ingredient.
Kristine was the food editor at Bon Appétit magazine for 20 years, where she was responsible for filling its pages with delicious recipes. The dishes she created for many covers and feature stories were so popular, they are republished in the Bon Appétit cookbooks. She is currently working as a cookbook author, and her seventh and eighth books, Weeknight Gluten Free and Gluten-Free Baking, came out in 2013 and 2014. She recently developed celiac disease, and these books are a result of glorious experimentation in the kitchen. They are good companions to her previous book, Williams-Sonoma Weeknight Fresh and Fast. She enjoys inspiring people to cook fresh, gluten-free food on her blog, www.kristinekidd.com. Kristine teaches people to make Gluten-Free Italian Classics: Pasta, Pizza and More in a Craftsy video. She is a regular contributor to Living Without’s Gluten Free and More magazine, teaches cooking classes, and also works as a culinary consultant. Even though she is busy, she prepares fresh meals at home almost every night. She shops at farmers’ markets, and uses local and sustainable ingredients whenever practical.
Amy Macklin, RDN is an author, sought after speaker, and successful workshop leader who educates parents and children alike on the mastery of living what she calls gluten-FREEly, life without limitations. Amy believes gluten-free children, including her son, deserve to experience life as their peers do and should not be held back or defined by a diet. She is a registered dietitian that became a gluten-free nutrition expert as a result of raising her son, Anthony. Inspired by her journey and a passion to help others experience their best gluten-free life, Amy founded Gluten Free Roots. Her approach is simple and practical. Amy Jones, M.S., R.D., L.D. is a registered dietitian, speaker, and author who specializes in Celiac disease and non-Celiac gluten sensitivity. She founded and leads monthly meetings for the Logan County Celiac Support group in Bellefontaine, Ohio. She is also the chair-elect of the Dietitians in Gluten Intolerance Disorders practice group for the Academy of Nutrition and Dietetics.
She has presented webinars for the National Foundation for Celiac Awareness (NFCA), and was the featured dietitian presenter in a recently produced NFCA video on gluten-free grocery shopping. She has presented at the Nationwide Children’s Hospital Celiac Conference for the last four years, as well as other Celiac events throughout the region. She recently presented on the gluten free labeling rule at ExpoWest 2015 in Anaheim, California.
Lara Holland, known as Food Allergy Gal, is a food industry expert with over 12 years of managing multiple food allergies personally and professionally in and out of commercial kitchens. She was diagnosed with adult onset allergies and personally manages 15 of her own life threatening food allergies. She has been devoted to creating solutions for those diagnosed with food allergies for the last 3 years, creating the AllerCoach program, AllerSmartMenu and a few more under the Food Allergy Gal label. Lisa Musician, RD LDN has over 15 years of experience working with a board certified allergist and is a member of several national and state organizations. She holds several certifications of training as a Food Allergy Specialist and speaks professionally to organizations, schools and support groups about the management of food allergies and increasing optimal health. Not only does Lisa have experience managing her own food allergies, she is also the mother of two adult children with multiple food allergies. Lisa has presented on food allergies for the Food Allergy Bloggers Conference and at numerous groups of nutrition professionals, nurses and other health care professionals. She is recognized as a food allergy expert and served as a panelist for the Food Allergy Wellness Tele Summit. Lisa is currently on the advisory board for AllerCoach and is the Founder and President of Food Allergy Dietitian, Inc., where she brings together her professional and personal experience to help those with food allergies avoid their allergen and develop a safe, healthy and balanced diet. After defeating several life-threatening health conditions and receiving the gift of great health, Jen Cuevas began sharing her personal story to raise awareness about gluten sensitivity and Celiac Disease. Jen became determined to help others succeed with the same grain-free, soy-free lifestyle that had vastly improved her own health. Applying the knowledge she had acquired, she became a certified coach, training her clients, support group, and audiences to think differently about the impact of foods. Now a national speaker, she shares her personal health journey to inspire dietary changes as part of a holistic approach to achieving optimal health.
Jen’s passion carries forward as the founder of The Gluten & Grain Free Gourmet, a company whose motto is “Your healthy life can STILL be delicious!™” Through this dedicated grain-free, soy-free food company, she provides Paleo and allergen-friendly treats, meals, and pizzas to help people succeed with their new dietary lifestyles. She even offers allergen-free Communion to churches in order to raise awareness about the effects of “just one crumb of gluten” and exposure to other allergens.
