Topic: Gluten Free Food Labeling & Food Safety
Location: Lecture Stage

The landscape of gluten-free food labeling has changed radically since the FDA’s new regulations went into effect. Find out what it means to say “gluten-free,” what it means to be “certified gluten-free,” what “gluten free endorsements” are, and how to tell the difference. Associate Editor of Gluten Free & More Magazine, Jules Shepard, was instrumental in pushing for the FDA regulations, and has been vocal in holding manufacturers to the highest standards ever since. Jules will teach you how to shop for safe GF products, plus explain the confusing distinction between “purity protocol oats” and mechanically or optically separated oats, and answer questions about the safety of oats in new mass marketed, labeled “gluten-free” products. Come with questions and leave with answers to help you shop safely, gluten free.

Topic: Baking Homemade Gluten Free Baguettes

Gluten-free baking expert, cookbook author and Gluten Free & More Magazine Associate Editor Jules Shepard will show you how to easily make authentic gluten-free baguettes, even if you’ve never baked bread before!
